From the short list, I love sacred poetry, poetry in translation, and form poetry. If the timing is right, I might consider hosting Sacred Poetry Week.

For the others, hmm, I won a contest for a Welsh/English poem once, and I enjoy inventing forms. Form invention might be a fun activity if anyone else here likes that.

On the long list, I have experience with:
genre poetry
teaching poetry/academic critique
seasonal poetry
prompted poetry
editing poetry
poetry resources
writing exercises

For much of that I have material already written that I could just link to or port over.

This is all good to know; thank you for listing it out. In terms of the short list, there are two prospective Poetry Hosts in the queue who will likely cover sacred poetry and poetry in translation respectively, but they are such rich topics that I can easily see us revisiting them later on in the year.

In terms of the rest, why not add yourself to the signup post queue again and use one of those categories as your guiding theme for the week when your turn comes around? I'd probably check in with you re: doing so around mid-February.

Perhaps people would like to focus on a particular language or a particular religion? That would make it easy to diversify popular topics: Spanish/English, Cherokee/English, etc. for Poetry in Translation and Christian Poetry, Sufi Poetry, Pagan Poetry, etc. for Spiritual Poetry.
