I (and a lot of other people) use Audacity. It's free and can be used for both recording and editing. Here and here are two tutorials that might help, although both are aimed at recording podfic, so you can just scroll past the stuff about fan fiction to get to the bits about using Audacity. Or just google! I'm sure there are other tutorials out there. : )
